      Ingredients

      • 200g digestive biscuits
      • 100g dark chocolate
      • 100g white chocolate
      • 100g unsalted butter
      • 1 teaspoon vanilla extract
      • 100g dried cranberries
      • 100g desiccated coconut
      • 50g mini marshmallows

      Instructions

      1. Line a 20cm square baking tin with baking parchment.
      2. Break the digestive biscuits into pieces and put into a bowl.
      3. Melt the dark and white chocolate, butter and vanilla extract in a bowl over a pan of simmering water until smooth.
      4. Pour the melted chocolate over the digestive biscuits and mix until the biscuits are coated.
      5. Add the cranberries, coconut and marshmallows to the biscuit mixture, and mix until combined.
      6. Pour the mixture into the prepared baking tin and press down with the back of a spoon to flatten.
      7. Chill in the fridge for at least 2 hours.
      8. Remove from the fridge and cut into slices.
      9. Serve chilled.
