Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder

Instructions
Preheat oven to 350°F. Grease and flour a 9x13-inch baking pan.

In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Add the buttermilk and vanilla extract and beat until combined. Add the dry ingredients to the wet ingredients and mix until just combined.
Fold in the grated beets and chocolate chips. Pour the batter into the prepared pan and spread evenly. Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
