Ingredients
For the cake layers:
- 3 cups all-purpose flour
- 2 cups granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 sticks (1 cup) unsalted butter, softened
- 1/2 cup cocoa powder
- 1 cup buttermilk
- 2 large eggs
- 2 teaspoons vanilla extract
For the chocolate ganache:
- 2 cups semi-sweet chocolate chips
- 1 cup heavy cream
For the frosting:
- 2 sticks (1 cup) unsalted butter, softened
- 3 cups confectioners' sugar
- 1/2 cup cocoa powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 2 tablespoons heavy cream
Instructions
To make the cake layers: Preheat oven to 350°F. Grease and flour 2 9-inch round cake pans. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Add the butter and, using an electric mixer, beat until the mixture is crumbly. Add the cocoa powder and mix again.
In a separate bowl, whisk together the buttermilk, eggs, and vanilla. Slowly add the wet ingredients to the dry ingredients, mixing until just combined.
Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted in the center of the cakes comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
To make the chocolate ganache: Place the chocolate chips in a medium heat-proof bowl. In a small saucepan, heat the heavy cream until it just begins to simmer. Pour the hot cream over the chocolate chips and let sit for 5 minutes. Stir until the chocolate is completely melted and the ganache is smooth and glossy. Allow to cool for 10 minutes before using.
To make the frosting: In a large bowl, beat the butter until light and fluffy. Gradually add the confectioners' sugar, cocoa powder, and salt, beating until combined. Add the vanilla and cream and beat until light and fluffy.
To assemble the cake: Place one cake layer on a serving plate. Spread a layer of ganache over the top. Place the second cake layer on top. Spread the frosting over the top and sides of the cake. If desired, garnish with chocolate shavings.
