Chocolate Sponge Wedding Cake Recipe
The Chocolate Sponge Wedding Cake is the perfect way to show your love! Ingredients
- 225g (8 oz) butter, softened
- 225g (8 oz) caster sugar
- 4 large eggs
- 175g (6 oz) self-raising flour
- 50g (2 oz) cocoa powder
- 1 teaspoon baking powder
- 175ml (6 fl oz) milk
- For the filling:
- 400ml (14 fl oz) double cream
- 175g (6 oz) dark chocolate, chopped
- For the topping:
- 100g (4 oz) dark chocolate, melted
- 2 tablespoons cream
Instructions
Preheat the oven to 180°C (350°F, gas mark 4). Grease and line two 20 cm (8 inch) round cake tins.
Cream the butter and sugar together until light and fluffy. Beat in the eggs one at a time, then fold in the flour, cocoa powder and baking powder until fully combined.
Spoon the mixture into the prepared tins and bake for 25–30 minutes, until a skewer inserted into the centre of the cakes comes out clean.
Remove the cakes from the oven and leave to cool in the tins for 10 minutes, then turn out onto a wire rack to cool completely.
To make the filling, heat the cream in a saucepan until it is just boiling. Remove from the heat and stir in the chopped chocolate until melted and smooth. Leave to cool and thicken.
Spread the chocolate ganache over one of the cakes and sandwich together with the other.
To make the topping, mix the melted chocolate and cream together and spread over the top of the cake. Leave to set.
