Instructions

Making the Cake

Preheat the oven to 180°C/350°F. Grease and line a 23cm/9-inch springform cake tin with baking parchment.

Melt the chocolate and butter together in a heatproof bowl set over a pan of barely simmering water. Stir until smooth and set aside to cool slightly.

In a separate bowl, whisk together the eggs and sugar until light and fluffy. Add the ground almonds, cocoa powder, and salt and whisk until combined. Slowly pour in the melted chocolate and butter and whisk until combined.

Pour the mixture into the prepared tin and bake for 25-30 minutes, or until a skewer inserted into the centre of the cake comes out clean. Set aside to cool completely.

Once the cake has cooled, make the chocolate mousse. Whip the double cream, icing sugar, espresso, and rum (if using) together until soft peaks form.

Melt the remaining 150g of chocolate in a heatproof bowl set over a pan of barely simmering water. Once melted, fold into the whipped cream mixture until combined.

Cut the cake in half horizontally and spread the chocolate mousse over the bottom layer. Place the top half of the cake on top and press down lightly. Refrigerate for at least 1 hour before serving.
