Ingredients

This recipe serves 12-14 people, and requires 7 ingredients:

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup cocoa powder
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup vegetable oil

In addition to these ingredients, you will also need:

  • 2 eggs
  • 1 cup buttermilk
  • 2 teaspoons vanilla extract
  • 2 cups chopped hazelnuts
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1/4 cup butter
  • 1/4 cup light corn syrup

Instructions

To make the cake, preheat your oven to 350°F, and grease two 9-inch round cake pans. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. In a separate bowl, whisk together the oil, eggs, buttermilk, and vanilla until combined.

Add the wet ingredients to the dry ingredients, and mix with a rubber spatula until everything is combined and there are no lumps. Add the hazelnuts and chocolate chips to the batter, and mix until combined. Divide the batter between the two prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

When the cakes are done baking, let them cool in the pans for 10 minutes. Then, turn them out onto a cooling rack and let them cool completely.

To make the frosting, melt the butter in a medium saucepan over low heat. Add the cream, corn syrup, and chocolate chips, and stir until the chocolate chips are melted and everything is combined. Remove from heat and let cool for a few minutes.

Once the frosting is cooled, spread it over the top of one of the cooled cakes. Place the second cake on top and spread the remaining frosting over the top and sides. Sprinkle with additional chopped hazelnuts, if desired. Let the cake cool completely before slicing and serving.

Tips for Making the Perfect Chocolate Hazelnut Layer Cake

This recipe is a great starting point, but there are a few things you can do to ensure that your cake is perfect every time:

  • Make sure that all of your ingredients are at room temperature before you begin. This will make the batter smoother and easier to mix.
  • It is important to make sure that the cakes are completely cooled before you frost them. If the cakes are still warm, the frosting will melt and make a mess.
  • If you want extra flavor, you can add a teaspoon of ground hazelnut or almond extract to the wet ingredients.
  • If you don’t have buttermilk, you can make a substitute by combining 1 cup of milk with 1 tablespoon of lemon juice or white vinegar. Let the mixture sit for 5 minutes before using.
  • If you don’t have hazelnuts, you can use any other type of nut, such as walnuts or pecans.
