Ingredients

This recipe requires the following ingredients: one and a half cups of all-purpose flour, one teaspoon of salt, three-quarters of a cup of butter, one and a quarter cups of water, five large eggs, two tablespoons of sugar, one teaspoon of vanilla extract, one-eighth teaspoon of cream of tartar, one cup of semisweet chocolate chips, one-quarter cup of heavy cream, and one-quarter cup of light corn syrup.

Instructions

To begin, preheat the oven to 400°F and grease a baking sheet. In a medium-sized saucepan, melt the butter, and then add the water, sugar, and salt. Bring the mixture to a boil, and then remove it from the heat. Add the flour all at once and stir with a wooden spoon until the mixture comes together and forms a ball. Transfer the mixture to a stand mixer, and beat in the eggs, one at a time, until the dough is smooth and glossy. Drop spoonfuls of the dough onto the prepared baking sheet, and bake for 25 minutes, or until the éclairs are golden brown.

For the topping, melt the chocolate chips and cream together in a double boiler. Once melted and smooth, add in the corn syrup and stir until combined. Allow the mixture to cool slightly before drizzling it over the cooled éclairs. Let the éclairs set for at least an hour before serving.
