Ingredients:
- 1 ½ cups almond flour
- 2 tablespoons coconut flour
- ½ teaspoon baking soda
- ¼ teaspoon sea salt
- 2 tablespoons pumpkin spice
- ½ cups (4 ounces) sugar-free dark chocolate chips
- ½ cup canned pumpkin puree
- 3 tablespoons melted butter
- 2 tablespoons monk fruit sweetener
- 1 teaspoon vanilla extract
Instructions:
Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
In a medium bowl, whisk together almond flour, coconut flour, baking soda, sea salt and pumpkin spice. Set aside.
In a separate bowl, mix together chocolate chips, pumpkin puree, melted butter, monk fruit sweetener and vanilla extract. Add the wet ingredients to the dry ingredients and mix until combined.
Using a cookie scoop or spoon, scoop the dough into 1-2 inch balls and place on the prepared baking sheet. Bake for 12-15 minutes or until the edges are slightly golden brown. Allow the cookies to cool before serving.
