No-Bake Chocolate Macaron Recipe
Ingredients
To make the chocolate macaron base, you will need: 3 tablespoons of unsalted butter, 1/2 cup of powdered sugar, 1/4 cup of cocoa powder, 1/2 teaspoon of vanilla extract, and 1/2 cup of crushed graham crackers. To make the chocolate ganache, you will need: 1/2 cup of semi-sweet chocolate chips, 2 tablespoons of heavy cream, and 1 teaspoon of butter.
Instructions
To make the macaron base, start by melting the butter in a small saucepan on low heat. Once the butter is melted, add the powdered sugar, cocoa powder, and vanilla extract. Stir until the ingredients are fully combined and the mixture resembles a thick paste. Remove the mixture from the heat and stir in the crushed graham crackers until well combined. Line a baking sheet with parchment paper and spread the macaron base evenly onto the paper using a rubber spatula. Place the baking sheet in the freezer for at least 30 minutes to allow the base to set.
To make the chocolate ganache, combine the semi-sweet chocolate chips, heavy cream, and butter in a small bowl. Microwave the mixture in 30 second intervals, stirring after each interval, until the chocolate is completely melted and the mixture is smooth. Remove the baking sheet from the freezer and spread the chocolate ganache over the macaron base. Place the baking sheet back into the freezer for at least 30 minutes to allow the ganache to set.
Once the ganache has set, remove the baking sheet from the freezer and cut the macarons into small squares or triangles. Serve the macarons immediately or store them in an airtight container in the refrigerator for up to 5 days.

You can also mix in chopped nuts or dried fruit to the macaron base before baking for added texture and flavor. For a vegan option, substitute the butter with coconut oil and the heavy cream with almond or cashew milk.
