Ingredients

For this delicious recipe, you will need:

  • 2 tablespoons water
  • 1 teaspoon unflavored gelatin
  • 1/2 cup cream cheese, softened
  • 1/4 cup confectioners’ sugar
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 6 ounces semi-sweet chocolate chips
  • 1/4 cup heavy cream
  • 2 tablespoons vegetable oil
  • 1 pound fresh strawberries, washed and dried

Instructions

First, pour the water into a small heat-proof bowl and sprinkle the gelatin over it. Let it sit for 5 minutes, then microwave in 30-second intervals until the gelatin has dissolved. Set it aside to cool.

In a medium-sized bowl, beat together the cream cheese, confectioners’ sugar, lemon juice, and vanilla extract. Beat until everything is well combined. Gradually add the cooled gelatin and continue to beat until the mixture is light and fluffy.

Using a teaspoon, scoop out the cream cheese mixture and fill each strawberry. Make sure to fill the strawberries until the cream cheese is overflowing and even. Set aside.

In a medium-sized bowl, combine the chocolate chips, heavy cream, and vegetable oil. Heat in the microwave in 30-second intervals, stirring every time, until the mixture is smooth. Dip each strawberry into the melted chocolate, making sure to coat all sides. Place the strawberries on a parchment-lined baking sheet and refrigerate for at least 1 hour.
